Light choux pastry baked in the traditional Paris Brest shape in honour of the famous cycle race between Paris and Brest in 1910 by Pastry chef Louis Durand.
This is then filled with crème au beurre and praline paste. Finished with almond flakes and a dusting of icing sugar. They’re gluten free and irresistible!
